Wild Rice Three Grain Bread

Yield: 1 To 2 loafs
1 package Active Dry Yeast
1/3 c Warm Water; 105-115?F
2 c Milk; scalded and cooled
- to 105-115?F
2 T Butter or Margarine; melted
2 t Salt
1/2 c Honey
1/2 c Rolled Oats; uncooked
1/2 c Rye Flour
2 c Whole-Wheat Flour
4 1/2 c Bread or All-Purpose Flour
1 c Wild Rice; cooked
1 Egg; beaten with
1 T Water
1/2 c Sunflower Seeds; hulled
In a large bowl, dissolve yeast in water. Let stand 5 minutes. Mixture
should become foamy; if not, either yeast was too old or water was too
hot. In either case, start again. Add milk, butter, salt and honey.
Stir in oats, rye flour. whole-wheat flour and 2 cups of bread flour to
make a soft dough. Knead in wild rice. Cover and let rest for 15
minutes. Then mix in enough additional bread flour to make a stiff
dough.
Turn onto bread board and knead for 10 minutes, adding more flour as
necessary to keep dough from sticking. Turn dough into lightly greased
bowl, cover and leave in draft-free place until doubled in bulk, about
2 hours.
Punch down dough and knead briefly. To shape, divide dough into 3
parts; shape each part into a strand and braid together to form a
wreath. Or divide dough into 2 parts and place in 2 greased 9" baking
pans.
Let rise until doubled, about 45 minutes. Meanwhile, preheat oven to
350F. Brush tops with egg-water mixture. Sprinkle with sunflower seeds.
Bake about 45 minutes, until loaf or loaves sound hollow when tapped.
Cool on rack.

Chinese Fried Rice

Yield: 4 Servings
4 c Rice, leftover; cold
6 sl Bacon; cooked,crumbled OR-
1/4 c BACOs
1 T Sugar, white
3 T Soy sauce dark
3 Eggs
4 Green onions; including
- green, sliced
1/4 c Peas, frozen (optional)
- Bacon drippings or oil
Cut bacon into cubes and cook until crisp. Drain but keep drippings.
Set bacon aside.
Beat 3 eggs in bowl with a little water until well blended Heat wok
over med high temp, pour 1 Tbl bacon fat drippings into wok. Pour eggs
in wok, scramble until set and remove and set aside.
Place 2 Tbl bacon fat drippings into wok. Place cold rice into wok and
stir fry for 2 - 3 mins. Add sugar and soy sauce, stir fry until
uniform in color. Add green onions, (peas - optional), bacon and cooked
eggs. Stir fry for another minute, serve hot.
You can add any other meats such as leftover cooked pork, chicken, ham,
etc. Add with the green onions and peas.
MEATLESS VERSION
Follow above except use peanut oil instead of bacon drippings. Replace
bacon with 1/4 cup of BACOS or BACO chips.

Chickenlegs with Mango Chutney & Carott Rice

Yield: 2 Servings
18 oz Chickenlegs,allready cooked
---Chutney:---
1 Mango, fresh or
1/3 oz Mango ,canned
1 Onion
1 Piece of fresh Ingwer
1 T Oil
2 oz Raisins
1 T Sugar
3 T Vinegar
1 T Catsup
Pepper
1/2 t Coriander
1/2 t Kurcuma
---Rice:---
5 oz Rice
3 T Coconut, shredded
3 1/2 oz Carotts
1/3 oz Butter
2 T Sugar
Bake the precooked chickenlegs in 200 C oven untill they are brown. 2.
Peel the mango, remove stone and cut into small cubes. 3. Peel and chop
onion finely. 4. Peel and chop ingwer finely. 5. Heat the oil and saute
the onion; add the mango and ingwer.Saute a minute more.Add the rest
and let it simmer 30 minutes. Let it cool and season as hot as you
like. 6. Simmer the rice in saltwater until done; keep warm 7. Put the
coconut into a dry skillet and brown it. Peel the carotts and cut into
fine strips or grate them. 9. Heat the butter in skilett and fry the
carotts shortly; add sugar and heat until sugar has become caramel.
Stir all the time. 10.Add carotts and the coconut to the rice, mix and
serve with the cold chicken and the cold mango. Good for hot
summerdays.

Margarita Fruit Salad

Ingredients

Tequila Orange Liqueur Dressing:
1/2 cup Jose Cuervo Authentic Margarita
3 tablespoons orange marmalade
2 teaspoons lime juice

Fruit Salad:
4 cups fresh strawberries, sliced
4 oranges, peeled and sectioned
1 honeydew melon, rind and seeds removed, cut in small chunks
1 small cantaloupe melon, rind and seeds removed, cut in small chunks
1 small pineapple, peeled and rind removed, cut into small chunks
1/2 cup fresh mint leaves, sliced thin

Directions

In a large bowl, mix together margarita, orange marmalade and lime juice.
Add strawberries, oranges, pineapple, honeydew and cantaloupe. Stir to combine and refrigerate for several hours or overnight to allow the flavors to blend.
Add mint, toss and serve.

How to Make Chocolate Cake

QUICK CHOCOLATE CAKE

Servings: 12
Prep: 5 minutes
Total: 35 minutes

Ingredients

3 cups all-purpose flour
2 cups granulated sugar
2 cups cold water
2/3 cup vegetable oil
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
2 teaspoons white vinegar
1 teaspoon salt
1 teaspoon vanilla
Ice cream (optional)
Whipped cream (optional)
Powdered suger (optional)

Directions

Preheat oven to 350 degrees F. In a large mixing bowl combine flour, granulated sugar, the water, the vegetable oil, cocoa powder, baking soda, white vinegar, salt, and vanilla. Beat with an electric mixer on medium to high speed until well combined. Pour batter into a greased 13x9x2-inch baking pan.
Bake for 35 minutes or until a wooden toothpick inserted near the center comes out clean. If desired, serve with ice cream or whipped cream, or dust with powdered sugar.

Deboning a Chicken Breast

Happily, the process for boning a chicken breast is a very simple one: you'll master the method in no time at all!

1. The breast might have cartilage, bone, and tendons remaining from the original removal of the breast from the whole chicken.

2. Remove the entire wing from the breast, being careful to leave as much meat as possible on the breast portion. We like to remove the wing tips (as shown in the photo), saving the tips for stock, and using the wings in another recipe.

3. Next, separate the meat from the ribs. With the breast skin-side up, start at the breastbone and use your knife to make a cut along the length of the bone.

Make short, scraping cuts very close to the ribs, while gently pulling the meat away with your other hand.

Continue to cut with your knife close to the bone, and remember, never cut towards your fingers.

Reserve the bones for making stock (keep them in the freezer in a zipper bag until you're ready to use them) or discard them.

4. Remove as much skin from the breast as you would like. Keep in mind a skinless breast contains less fat than a breast with skin intact. However, a skinless breast will require a small amount of added fat to sear or fry it nicely. You can cut the chicken breast into small chunks to add to a stir fry, cut it into strips, or leave the chicken breast whole to be fried, barbequed, or seared.

Ingredients

6 hard-cooked eggs, peeled
1 tablespoon sour cream
1 teaspoon Dijon mustard
2 teaspoons lemon juice
Dash paprika
Garnish: additional paprika and 12 green-olive halves


Directions
1. Using a sharp knife, cut eggs in half lengthwise. Remove egg yolks and place in a bowl. Set aside egg-white shells.
2. Using a fork, mash egg yolks. Add remaining ingredients to egg yolks, stirring until smooth and creamy.
3. Fill egg-white shells with egg-yolk mixture. Garnish each egg half with one green-olive half, if desired. Refrigerate until serving time.

Pasta Broccoli and Chicken

Ingredients

12 ounces rigatoni pasta
1/2 pound fresh broccoli florets
1/4 cup olive oil
1 tablespoon minced garlic
2 tablespoons pesto
1 cup chopped tomatoes
3/4 cup grated Parmesan cheese
1 pound boneless chicken breast halves, cooked and chopped
salt to taste
ground black pepper to taste

Directions

In a large pot with boiling salted water cook rigatoni pasta until al dente. Drain.
Meanwhile, blanch broccoli florets in a medium size saucepan, remove with slotted spoon. In same pan saute the minced garlic and pesto sauce in the olive oil for 2 minutes. Add the chopped tomatoes and set aside.
In a large bowl toss cooked pasta with blanched broccoli, cooked chicken, and garlic/tomato mixture. Add grated Parmesan cheese, salt, and ground black pepper and mix well. Serve warm.

Grilled Chicken Parm Cheese

Chicken Parm Grilled Cheese

a;lkdsfkdsfkadslkjf;jldkfjf!!! That’s the only way I can think of to express my excitement about this sandwich through words over the Internet. This Chicken Parm grilled cheese idea had been floating around in my head for a long time but I never gave it a shot. I thought critically about the construction of it. The bread has got to be right, I used a good Italian bread. The cheese should be a good quality fresh mozz, although I have a hunch that the dried mozz would melt quicker (give it a shot and let me know). The chicken cutlet MUST be pounded out thin. When we talk about grilled cheese, its all about proportions. You can’t have a thick breaded chicken breast in there, it just doesn’t work like that, its not a grilled cheese. The tomato sauce needs to be simple and fresh. There are four ingredients in mine. I start with thinly sliced garlic and basil stems that cook in olive oil to flavor the oil. Then I pour in a can of whole peeled San Marzano tomatoes, some salt and I cook it for about 30 minutes and then blend it smooth. At the end, check for salt, tomatoes NEED salt and depending on the acidity, one can may need more salt than another so you must taste it. Its fool-proof! But the kicker in this sandwich is the fresh basil leaves. It really brings home the Italian flavors. This sandwich makes me proud. Ingredients:

1 Homemade breaded organic chicken breast, pounded thinly. Try to create a piece of chicken that will fit the shape of the bread that you use.

1/2 Cup (4-5 slices) Mozzarella cheese

4-5 Fresh basil leaves

2 Slices of a Italian Bread

Fresh Tomato Sauce

Mayo, instead of butter for spreading on the outside of the bread.

Thinly slice up the mozz.

Take your cooked chicken cutlet and dip it in hot tomato sauce. The reason I highlight hot is because mozzarella can be difficult to fully melt. By having the sauce hot, it helps cook the grilled cheese from the inside out, helping to speed up the process.

To assemble the sandwich, place about 2 slices of mozzarella on each side of the bread along with 2-3 basil leaves. Then lay the hot tomato sauce covered chicken cutlet on one side and close up the sandwich.

Evenly spread the mayo all over the outside surface of the bread.

It’s best to use a cast iron pan if you have one, if not, a good non-stick works fine. You don’t want the heat too hot but you don’t want it too low either. You have to find a happy medium. Don’t melt butter the pan, the mayo browns the bread really nicely. You could use a butter/mayo mix as well, that’s probably the best. Some grilled cheese places will say they have a “special” spread that crisps the bread up real nice…yea, that’s just mayo and butter.

Cook it until the bread it nicely golden brown and then carefully flip it. Cook the same way on the other side. If the cheese isn’t fully melted but both sides are browned keep flipping the sandwich to keep it on the heat but preventing it from getting burnt.

Once the cheese is melted, cut the sandwich in half and revel in the absolute beauty of this beast.

Freak Breakfast Burrito

When I was younger and didn’t know anything I liked McDonald’s. Loved it. I used to say to myself, “Boda-ba-ba-baaa, Steve’s lovin’ it.” Among the many things I once loved there, I particularly enjoyed starting my day with one of their breakfast burritos. From what I remember, it was made up of some scrambled eggs, American cheese, sausage, peppers and onion. Of course it came with hot sauce. It was a mini little guy, you could eat two of them no problem. I stopped eating that, mainly due to the fact that I stopped eating from McDonald’s (why I stopped eating there is another post). Since I stopped eating fast food in general, I want to show people how much better they can make the food sold in fast food restaurants themselves. In the case of the breakfast burrito, I took McDonald’s basic concept for the burrito, switched the crappy ingredients with slammin’ ones and added some potatoes I cooked with peppers, onions, garlic and paprika and you get an infinitely better product that you would otherwise get from Ronald-McDonald-land (what a sketchball).

Ingredients:

1/2 lb Sweet Italian Sausage Meat

4 Good Quality Eggs, Scrambled

2 Russet Potatoes, Cubed

1 Small Onion, Chopped

1 Red Bell Pepper, Chopped

3 Garlic Gloves, Chopped

1 Cup of Shredded Cheddar

12 or 16 Inch Flour Tortilla

2 Tablespoons of Paprika

Salt & Pepper

Butter

Canola Oil

Slice about 4 thin planks from each potato. Lay the planks flat on the cutting board and slice the stack lengthwise into two or three pieces depending on the size of the potato.

Slice the dissected stack into cubes.

Cut the top off the onion and slice it in half. Take off the skins and lay each half flat on the cutting board. Slice the onion horizontally all the way up the onion, keeping your finger way the hell out of the way. Make sure you have a really sharp knife. A dull knife is more dangerous than a sharp one.

Slice the onion vertically all the way across the onion and then dice it up.

Chop the top off the pepper and slice out a little bit of the ribs on the inside.

Take each piece and cut even slices, keeping them lined up. Turn them 90 degrees and cut little dices of pepper.

Smash some garlic and chop it up.

Add about a tablespoon of butter and a tablespoon of canola oil to a pan over medium high heat and when the butter is melted and hot, add the cubed potatoes. Cook until the potatoes get a nice golden color on the sides of each piece.

When the potatoes are browned, add the onions, peppers, garlic, some salt, pepper and paprika and cook that until everything gets a nice color and the potatoes are fully cooked through. Taste it and make sure it tastes amazing and then transfer it to a plate.

While the potatoes are cooking, take the sausage meat and very roll it into little tiny rustic meatballs.

Add the sausage balls to a hot pan with canola oil over medium high heat. Shake the pan every now and then to make sure they don’t stick but make sure you try and get a nice sear on all sides. It’s OK if it gets little dark, that’s actually how I like my sausage but make sure you don’t burn it obviously. When the sausage is cooked through and browned on all sides, transfer it to a paper towel lined plate to drain the grease.

Fold up a few of the tortillas in aluminum foil and toss it in a really hot oven, like 450…500 degrees, for 5-10 minutes, until the tortillas nice and flimsy and hot so they are easy to roll and extra delicious. It will also help melt the shredded cheddar. When the tortillas come out of the oven, keep them wrapped in the aluminum foil to keep warm while you get everything else ready.

Crack the eggs in a bowl, I used a measuring bowl, and whisk it until little bubbles sit at the surface of the scrambled eggs.

In a non-stick pan over medium low heat and melt a tablespoon of butter. When its melted, add the eggs and with a spatula, lightly stir cooking slowly until the eggs come together and are still moist but not over cooked. Transfer the cooked eggs to a plate.

Time to assemble the wrap. Get one of your hot tortillas and spread about a 1/4 – 1/2 cup of the shredded cheese.

Top the cheese with a bit of the egg and about 6-8 pieces of the sausage…

…then add some of the potatoes. You can also add some Frank’s Red Hot Sauce or some Siracha at this point…if you’re into that kind of thing.

Wrapping the burrito is a key step to master. A good roll makes the sandwich. It has to be tightly rolled so all the contents inside stay inside the wrap. Position the wrap in front of your body and fold up both sides of the tortilla over all the ingredients.

Flatten out all the ingredients inside while the sides are still folded up…

…roll it up carefully, making sure everything stays tightly wrapped inside…

…keep it tight while slowly rolling it. Roll in all the loose ends and then finish the roll and you end up with a perfectly rolled burrito.

If you ate this and would still rather eat McDonald’s breakfast burrito, get help…fast. There’s no reason, you can make it better.

healthy meal Salmon in a Bag

GOT A HOT DATE? Don’t waste your money on an expensive restaurant, or even worse, a horrible cheap one. Everyone loves a home cooked meal. If you are trying to make a good impression, invite the person over, get some wine and cook that shit yourself. The perfect dish to impress is, fish in a bag, or what the French call, Fish en Papillote. It’s easier to make than it is to pronounce, place a piece of fish on some aluminum foil, slice-up some vegetables and throw them on top with some lemon, butter and wine; finally seal up the foil. After a quick bake in the oven you can present a restaurant quality dish the will truly knock anyone’s socks off, or hopefully a little more, you might even ”get it in.” So make some fish in a bag, and then DO YOU!

Ingredients:

2 6-8 oz Wild Salmon fillets, you can use a white fish like Sole or Cod

1/2 Red onion, thinly sliced

1 Carrot, julienne or thinly sliced

1 Zucchini, julienne or thinly sliced

2-3 Garlic cloves, minced

1 Lemon

1 Cup of good white wine

4 Thyme sprigs, pulled from the stem

1 Tablespoon of butter

Olive Oil

Salt & Pepper

Preheat the oven to 400 degrees.

You only need half a red onion so cut it in half straight through the root. Put one half aside and take the skin off the other half. Then slice that half again into two parts. Then peel a few layers away so you can lay it kind of flat as seen below…

…once you have it secured on the board, slice nice thin even strips.

Take the tops and ends off the carrots and peel the skin away. Then take you vegetable peeler and peel a thin layer off one side of the carrot so that you have a flat surface for it to sit on your board without running all over the place.

Cut your big carrot in half so you have some manageable pieces to work with. Then carefully cut each half lengthwise into thin planks.

Take the thin planks and stack them a few at a time carefully cut them into thin julienne strips. Do yourself a favor and use a bigger knife than this one, its the wrong knife for this.

Take the ends of the zucchini and slice it in half, just like the carrots, so it’s manageable. Then stand up each half and cut thin planks, again, like the carrots.

Stack up the think planks a few at a time and then cut thin strips, just like you did to the carrots.

Smash garlic like you mean it…

Chop garlic.

Throw all that veg in a bowl…

Add about 3 tablespoons of olive oil…

…salt…

…pepper…

…and toss to combine.

Tear off a few fairly big pieces of aluminum foil and fold them in half.

Open one piece of foil up and place your salmon on one side of the fold. Give yourself enough room to seal the foil, I put the fish a little closer to the fold and to the edge.

Place a nice handful of the vegetable mixture over the fish along with some of the thyme.

Layer about 4 lemons on top of the fish and then top that with a knob of butter.

Start at one corner and crimp the edge to form an airtight seal all the way around.

Don’t seal it off all the way though, leave a little opening to pour your wine into.

Add the wine.

Once you’ve got all your little fish packages done, throw them on a sheet pan and bake them for 13 minutes…yes, 13 minutes exactly!

After 13 minutes, take it out and let it sit for a minute while you get together what you’re serving it with. I cooked up some jasmati rice. Quick fool proof recipe for rice: 1 cup rice, 2 cups water, a tablespoon of butter. Melt the butter in a little pot, toss in the rice and toast for about 5 minutes moving constantly, you don’t want them to burn. Once they start to smell nutty and are all coated in oil, add the water, bring to a simmer, put the lid on and cook for 15 minutes or until there are little oils in the rice from the steak escaping.

Plate up some rice and the fish making sure you get all those vegetables (minus the lemons) on to the plate on top of the salmon. The pour all the juices in the foil over the salmon, that’s the best part right there.

This meal is perfect for a date, its light, delicious, tasty, impressive and easy. Pour some of that wine you’ve got open, the compliments will ensure and you’ll know then that it’s in the bag…

Chicken Cutlet Salad with Balsamic Vinaigrette

Salads are great. Or should say, a well made salad is great. I’ve had some pretty bad salads in my day and it’s really a shame because a salad can be such a delicious meal. All you need to do is put a little thought and effort into making it great and you’ll be a salad making pro. The formula is pretty simple. Use a few really good quality ingredients with a good freshly made vinaigrette or dressing and maybe a little crunch if you can. That’s all it takes. You need a go to salad, this recipe right here is mine.

Chicken Cutlet Ingredients:

4 Boneless, Skinless Chicken Breast, Thinly Pounded (Get some good chicken, it really makes a difference)

1 1/2 Cups of All Purpose Flour

2 Eggs

1 Cup of Panko Break Crumbs

1 Cup of Italian Bread Crumbs

1 Tablespoon Each: Dried Oregano, Dried Basil, Garlic Powder, Onion Powder, Paprika

Salt & Pepper

Olive Oil

First thing to do is pound out your chicken breast so it all the same thickness. Then set up your breading station.

Get out a big ziplock bag and add the flour to it. Season it generously with salt and pepper and that shake it up to combine.

In big enough bowl to fit the chicken, add the eggs with a teaspoon and whisk it together. Season it generously with salt and pepper.

In a third bowl, mix together the panko, the Italian bread crumbs, dried oregano, dried basil, garlic powder, onion powder, paprika, salt and pepper.

Get your chicken out and a plate to park your breaded chicken and your station is ready to go.

First step, “dredge” the chicken (simply means fully covering your chicken in the flour). Throw all the pieces in the ziplock bag, close it up and shake it like crazy. Usually when I do it, the chicken tends to fold over itself and there are some spots left flourless. Just move the chicken around in the bag to make sure its fully covered. Then shake off the excess flour and add it to the egg mixture. Again, fully cover the chicken in egg then transfer it the bread crumbs. Push the bread crumbs into the chicken and make sure that it thoroughly breaded. Store it on a plate while you bread the rest of the chicken and if you’re not using them immediately, put them in the fridge.

On medium heat, cover the bottom of a large saute pan and add a knob of butter.

When the oil is hot and the butter is melted, add your chicken. You don’t want the oil too too hot or else you’ll burn the breading and the chicken won’t cook through so be mindful of that. Cook it on that side for around 5-6 minutes…

…or until it looks golden, brown and delicious, like this.

Once its browned on both sides and cooked through (if you don’t trust yourself and you’re worried its not cooked, just cut into it and take a peek), transfer it to a paper towel lined plate.

Salad Ingredients: Serves 2

2 Chicken Cutlets

A Bag of Mesclun Salad, Washed

1 Carrot

2 Bell Peppers

1-2 Cups of Cherry Tomatoes

1/4 Cups of Pine Nuts

Goat Cheese

Balsamic Vinaigrette: I’ll give you a rough recipe simply because I make it by eye every time. Just use the 2-1 ratio I explain below.

1/2 Cup Balsamic Vinegar

1 Cup Olive Oil

1 Tablespoon of Dijon Mustard

1 Tablespoon of Honey

Salt & Pepper

To make the vinaigrette, use a whisk to combine the balsamic vinegar, honey, mustard, salt and pepper in a bowl.

While you’re whisking, slowly stream in olive oil (or canola/vegetable oil, whatever you’ve got). The ratio for vinaigrette’s is about 1 part vinegar to 2 parts oil. I use a half cup of vinegar so I streamed in a cup of oil. You should be pretty vigorous with the whisking, the idea is to emulsify the oil with other ingredients. There’s nothing worse than a vinaigrette has the oil and vinegar separated, that’s just nonsense.

Once its combined, taste it, is should taste good (obviously) but should have a little bite. You want it a to taste a little stronger then you think because it mellows out once you combine it with the salad so don’t worry. Put it to the side and put your salad together.

Slice your cherry tomatoes in half and put off to the side.

Next, thinly slice (or julienne) the bell peppers. To do this, slice the top and a tiny bit off the bottom. Then make a slice so that you can flatten the whole pepper out into a big strip. Take your knife and trim the inside of the pepper so that you cut out the ribs and the core. This should leave you with straight pepper flesh, no ribs, no seeds. Then flatten the pepper out against the cutting board and slice the peppers in to strips.

For the carrots, I like to shave thin ribbons with a vegetable peeler. Use the peeler to remove the outside skin of the carrot and then hold it down on the counter and shave.

This is an optional move because pine nuts cost a stupid amount of money. You can use any other nuts you want or you could just not use nuts…but they are good for you and crunchy and tasty so you should probably think about using them. Just put them in a dry pan and toast them over medium heat until the brown and start to give off a nutty aroma but they will burn if you don’t keep moving them. This is usually where I practice tossing food in a pan. But seriously, be careful, they will burn so watch out.

Slice up your chicken real nice.

Usually I would mix the salad in a bowl to get the vinaigrette mixed up really well but I didn’t do it here. If you feel so inclined, its a lot easier to eat if you get the salad “dressed” (the term chefs use for salad that’s been tossed in dressing) before you plate it. Otherwise put everything on a bed of salad and pour the vinaigrette all over the place and top it with some of the nuts.
